The foundation of any soup is a great broth. When it comes to Asian cooking, you can’t go wrong with a simple chicken bone broth base. Here’s a quick recipe that can be used to make a simple bone broth using chicken bones.
I usually like to purchase a whole rotisserie chicken and shred the meat. And yes, you guessed it, the leftover chicken bones can be used to create a chicken bone broth soup.
Recipe
- 1 Rotisserie Chicken
- 1 Onion
- 8 cups of water
- Salt (add for taste)
Directions
- 1. Shred meat off rotisserie chicken
- 2. Place chicken bones into pot that will cook the broth
- 3. Cut onion in half with outside shell on (yes, this keeps the flavor)
- 4. Cook on low/medium for 1 hour
Helpful Notes
Star Anise – just a single star can elevate a chicken broth (the power of very little licorice can go a long way)
Ginger – give it a bit of a kick, traditionally in Chinese, Korean, and Japanese cooking, we always use ginger
Chili oil – give it a nice spicy kick!
